The other day, a friend gave us some fresh eggs.  She has hens and they lay unfertilized eggs.  I didn’t know you could do that without a rooster.  I made some egg salad and scrambled the rest.  I must say I am convinced this is the way to go.  It was creamy and simply delicious!  I should read up more on it and hopefully this summer, I will have a coop, some hens and my very own fresh eggs!
